So Jess is visiting the kitchen to teach you! An ideal method for items with lots of acid like berries, jam, jelly, tomato sauce and pickles, water bath canning uses boiling water to kill bacteria and create a pressurized seal. It’s a great skill for everyone to have, homesteader or not.
